Produced by just pressing the beans, this cocoa butter is unrefined and non-deodorized, allowing the natural cocoa aroma to remain. Cocoa butter, also called Theobroma oil, is a pale-yellow, edible fat. It is used to make white chocolate and other chocolate bars, giving the confection its smooth and silky mouthfeel. Cocoa butter has a cocoa flavor and aroma. Its melting point is just below human body temperature. Cocoa butter is obtained from whole cocoa beans.
