Carnaroli is widely hailed as the “king” or the “caviar” of Italian rice. Carnaroli is the preferred risotto rice in most regions of Italy except the Veneto. It produces the creamiest risotto, yet is more resistant to overcooking than arborio, which makes it the best rice to use for both beginners and experts. An amateur or home-chef could make restaurant quality risotto using this variety. It’s usually the most expensive of the three rice varieties.

The Carnaroli rice grains have the highest content of amylose, a substance that contributes to making the grain compact. For this reason, it boasts special astronomic attitudes with an exclusive balance between good absorption capacity and little starch loss, so that there is no danger of overcooking. This makes it an excellent rice variety, particularly appreciated by great chefs for the ability of its grains to stay hard at the core and to harmoniously combine with every ingredient.
