The Tracklement Company Ltd.
(UK)

Since 1970, in the heart of the
Wiltshire countryside, William
Tullberg, his son Guy and his
growing family of co-workers
have been making outstanding
products. They are driven by the
twin aims of producing the best
on the market, tasting as good
as the best home-made, and of
making it traditionally, in
small batches, with all natural
ingredients.
We are proud of our products and
our handmade manufacturing
process. We don't cut corners:
we grind our own mustard from
whole seed and spices and we use
the best quality, natural
ingredients. All this accounts
for the clean, clear, classic
tastes. The flavours are simple
and direct, allowing many uses,
from accompaniments to food on
the plate to dips, marinades and
in cooking.
We are a "people" Company.
People make the mustards and
know when they are ready by
experience and feel. People make
the sauces and chutneys and use
their experience and knowledge
to get them just right (using
fresh ingredients means that we
need to allow for variations -
for example, fruit and
vegetables may carry more or
less liquid and the chutneys may
have to be simmered a little bit
longer to get that "just right"
texture.) People provide the
efficient, yet flexible and
friendly service that is so
appreciated by our customers.
Our loyal customers are people
who know and care about good
food. They share our knowledge
and enthusiasm for great tastes,
simple tastes, simply made. To
them our thanks. And to those
who haven't met Tracklements
before, a warm welcome and a
promise of the kind of quality
that will make you yet another
enthusiast.
All of Tracklements mustards are
made using both brown and yellow
mustard seed in varying
quantities to give the mustards
their individual characteristics
and qualities. As well as being
used to make mustards, the
mustard seed we source is used
in a lot of our other products
to give them that extra kick. As
with all our ingredients, we are
dedicated to ensuring our
mustard is of the best quality
as we believe this leads to
producing the best taste. Due to
the breadth of its use and since
mustard is where Tracklements
started, we are especially
enthusiastic about is
provenance.
The mustard seed that the farmer
grows is the best quality,
organic seed. This combined with
our traditional recipes and
handmade techniques ensure we
continue to make products as
good as the best homemade.

England

producing its range of fabulous
creams for a long time. All our
cream is carefully heat treated
to preserve freshness. It has a
long life unopened when stored
cool or under refrigeration - up

a delicious topping for apple
pie, scones, muffins, waffles,
pancakes and berries or stir

in savory recipes to add
richness and flavor - especially

A traditional English cream tea
has the Devon cream as one of
its most important ingredients
and comprises of hot tea,
scones, strawberry jam and of
course cream.
The jam is spread onto the
scones and topped with a good
spoonful of thick cream. Most
tea houses, hotels and pubs
serve cream teas during the
summer months and enjoying a
cream tea has become a popular
tourist attraction. The next
most famous cream is thick
Double Devon Cream which is a
fresh pasteurized cream of 48%
milk fat with a distinctive
flavor (Clotted cream has a 55%
milk fat). Double Devon Cream
originated after World War II,
because the only cream then
available with a long shelf life
was tined sterilized cream with
a poor flavor.

LOS CHILEROS (Mexico) - Mexican Chillies,
Whole and Powder, Blue Corn Flours, Atole & Pasole
Imported by : Chenab Impex
(Mumbai, India)

MEXICO is the home of chillies.
The range and taste of chillies
from Mexico is like nowhere

launch the most amazing range of
Mexican Chillies. We offer dry
whole chillies as well as Chilly
powders. Also, on sale are the
Mexican Blue corn flours, meal
and traditional preparations
Atole & Posole.
Chillies, as you doubtless know,
originate from the Americas –
mainly from Mexico. It is from
here that the Spanish
Conquistadors brought this hot,
fiery stuff back to Spain and
then from Portugal they came to
Goa and became a must have
ingredient in most of Indian
cuisine.
We exclusively offer these great
Mexican ingredients from LOS
CHILEROS DE NUEVO MEXICO, the
definitive supplier of Mexican
Chillies ( and Mexican
ingredients) to the major stores
& hotels in USA. We also
introduce the Blue Corn Flours
and the traditional Mexican
preparations Atole & Pasole,
again from Los Chileros. All
products are 100% Natural with
no added preservatives or
flavours. The Chillies (and
flours) are described below,
with an indication of their
strength (heat), and suggestion
for use.
Of course, with this fantastic
assortment of chillies and blue
corn flour, meal, Atole & Pasole
AND our superb range of LA
COSTENA tinned & bottled Mexican
Beans, Tomatillos, Peppers,
Sauces, Mole, you can now create
the most authentic Mexican
Cuisine. In fact, you have no
longer any reason not to make
Mexican a regular on your menu.
AND WHAT IS MORE, THESE AMAZING
CHILLIES WILL ENRICH THE FLAVOUR
OF MOST INDIAN DISHES TOO!
(after all, these are the
original chillies).
brief
description of the chillies ,
rating on HOT scales,
suggestions for use are given
below :
A word about Chile Pepper
Varieties
The most common species of chile
peppers are:
Capsicum annuum (common
varieties such as bell peppers,
paprika, jalapeños, and the
chiltepin)
Capsicum frutescens (includes
cayenne and tabasco peppers)
Capsicum chinense (includes the
hottest peppers such as
habaneros and Scotch bonnets)
Capsicum pubescens (includes the
South American rocoto peppers)
Capsicum baccatum (includes the
South American aji peppers)
Many of the Mexican chiles have
different names for the fresh
and dried varieties. A 'poblano'
is called 'ancho' when dried and
the 'jalapeno' becomes
'chipotle' when dried and
smoked.

Grumpy Mule (U.K.) - Organic & Fairtrade Coffee
Imported by : Chenab Impex
(Mumbai, India)
What do we mean by
distinctive coffee?
We love to source the very best
coffees from some of the very
finest farms and cooperatives,
where putting the care and
effort into producing a high
quality coffee is of paramount
importance. Here, the character
of the farm combined with the
influence of micro-climate,
terrain and soil in the region
where the coffee grows, all have
an impact on the taste of the
coffee.
The blending of coffees is
without doubt a fine art and
craft, particularly for
espresso, but it can also be a
useful way of hiding
below-standard coffee or finding
an excuse to come up with a
fancy blend name. Taking coffee
to its simplest form, and right
down to root level, is not only
endlessly fascinating but
provides amazing taste
potential.
So, what isn’t a distinctive
coffee?
At Grumpy Mule we do not sell
“commercial” coffees (like
Brasil Santos or Colombian
Excelso, which says very little
about the coffee’s actual
heritage) and we don’t use
Robusta or novelty coffees that
sound more exotic than they
taste.
Importantly, our products are
also fresh coffees, not instant.
Admittedly, real freshly roasted
coffee takes longer to prepare
but it is well worth the extra
time and effort. Your friends
and family will thank you for it
too.

Pasticceria SCARPATO
(Italy)
Imported by : Chenab Impex
(Mumbai, India)
In
Italy, the expression "Natale con i suoi,
Pasqua con chi vuoi" is frequently heard
("Christmas with your family, Easter with
your own choice of friends"). Oftentimes,
this implies sitting down to a dinner that
starts with minestra di Pasqua, the
traditional beginning of the Neapolitan
Easter meal.
Other classic Easter recipes include
carciofi fritti (fried artichokes), a main
course of either capretto o agnellino al
forno (roasted goat or baby lamb) or
capretto cacio e uova (kid stewed with
cheese, peas, and eggs), and carciofi e
patate soffritti, a delicious vegetable side
dish of sautéed artichokes with baby
potatoes.
A holiday meal in Italy would not be
complete without a traditional dessert, and
during Easter there are several. Italian
children finish their dinner with a rich
bread shaped like a crown and studded with
colored Easter egg candies. La pastiera
Napoletana, the classic Neapolitan grain
pie, is a centuries–old dish with
innumerable versions, each made according to
a closely guarded family recipe. Another
treat is the Colomba cake, a sweet, eggy,
yeasted bread (like panettone plus candied
orange peel, minus the raisins, and topped
with sugared and sliced almonds) shaped in
one of the most recognizable symbols of
Easter, the dove. The Colomba cake takes on
this form precisely because la colomba in
Italian means dove, the symbol of peace and
an appropriate finish to Easter dinner.
Its time to stock up for Easter and Scarpato
offers traditional Italian Easter cakes –
Colomba. As you know, Scarpato offers its
iconic cakes at two times, every year –
Panettone / Pand’oro at Christmas and
Colomba at Easter.

you fight the heat, we offer you
Tasteful, Healthy and Organic
Belvoir Juices.

Belvoir juices are not your
usual fresh fruit juices, but
something quite different – in
taste, thirst quenching and
heat-combating properties. These
are really, what our grandmother
(if she were English!) would
have served on a hot summer
afternoon. They are made with
herbs and fresh juice and good
taste.
For example the good stuff range
features – Apple & Elderflower,
Rhubarb & Ginger Juice,
Pineapple & Grapefruit Juice,
Apple & Blueberry Juice, Pear &
Raspberry Juice – all good stuff
no doubt!
Then again, the SPARKLING PRESSE
(Juice) offers Elderflower, Lime
& Lemongrass, Cranberry &
blueberry & blackcurrant,
Pomegranate & Raspberry with
carbonated Belvoir spring water.
The Organic range features
ORGANIC SPARKLING PRESSE –
Organic Fresh Ginger beer (no
alcoholic contents), Organic
Handmade Lemonade and Organic
Blood Orange & Mandarin.

Tate & Lyle (U.K.)
Imported by : Chenab Impex
(Mumbai, India)
What a pleasure it is to
SWEETEN your life with
our new range of sugars.
In 2008 we launched the
range of Tate & Lyle
sugar products with
their signature GOLDEN
SYRUP, other coffee
topping syrups, and
rough-cut sugar cubes
(White and Brown). Today
we launch a range of
excellent speciality
sugars for the gourmet
as well as the bakery
Chef.
The SEVEN sugars
we launch are as below:
1.
Granulated Sugar (pure
cane sugar for drink &
cereals)
2.
Unrefined Demerara Sugar
(Produced in Mauritius)
(It has strong
distinctive flavour
which complements
Coffee)
3.
Caster Sugar (for
baking)
4.
Light Brown Soft Sugar
(for mellow flavour &
colour)
5.
Dark Brown Soft Sugar
(for rich flavour &
colour)
6.
Icing Sugar (for icing &
dusting)
7.
Fondant Icing Sugar (for
a soft glossy finish)

As you can imagine,
bringing sugar to India
is somewhat of a
challenge, firstly
because India is the
second largest producer
of sugar and also
because till recently,
the import duty on sugar
was a staggering 87%!
Not deterred by such
obstacles, in our quest
to “enrich the flavour
of life”, we ventured
forth and now we present
a really nice range of
sugars, never before
available to the Indian
retail customer or even
to the Chef. Choose from
any of the fine sugars
we offer and enjoy your
cup of tea or coffee or
slice of cake.

Clipper Tea (UK)
Imported by : Chenab Impex
(Mumbai, India)

tea to India is like carrying
coal to Newcastle (as the saying
goes), but we have in the past,
to the delight of our customers,

many products that are also
grown in India – Spanish
saffron, Italian Coffee,
Himalayan Sea Salt, Indian

probably no surprise to many of
our customers that we now
introduce tea, a product that is
practically synonymous with
India! Think Assam, Darjeeling,
Nilgiris.
The Tea (and Coffee and drinking
Chocolate & Hot Chocolate) that
we launch today is OUTSTANDING!
All products are CERTIFIED FAIR
TRADE (The farmer gets his due

white teas.
Clipper Tea, the Company that
produces this exquisite range,
has been working for over past
25 years with the leading
growers in Asia, Africa and S.
America. All the products they

the Best for the Customer but
also to assist the grower,
towards a sustainable future.
Clipper were the first tea in
the UK to carry the Fairtrade

the only company in the UK to

the purest ingredients of the

MacFarms
(Hawaii, USA)
Imported by : Chenab Impex
(Mumbai, India)

Macadamias as you probably
know, are the most expensive
of nuts. MacFarms is located
on the beautiful Kona coast
on the Big Island of Hawaii.
It is here that the gentle
Pacific trade winds,
year-round tropical sunshine
and rich volcanic soil
combine to produce the
finest macadamia nuts in the
world. Grown and processed
with care, MacFarms
macadamias are recognized as
Hawaii's tastiest souvenir
and most authentic gift.
The new packs are 3oz
pouches (85g) with the
macadamia with different
coatings and flavours –
Roasted & Salted, Salt &
Pepper, Honey Roasted, Kona
Coffee & Dark Chocolate,
Milk Chocolate with Toffee
and Milk Chocolate. (see
attached pricelist with
images).
MacFarms macadamias can be
added to salads for a
crunchy creamy taste or
consumed by themselves as a
snack. Macadamia nut oil (we
offer this oil from
Lapalisse and it can be used
in very many recipes)
contains the highest known
levels of palmitoleic acid
(19%) which is an omega 7
mono-unsaturated fatty acid
highly beneficial for the
body.
In addition to their
delightful nutty taste,
Macadamias contain
antioxidants associated with
a decreased risk of certain
types of cancer, like
breast, cervical,
gastrointestinal, lung,
stomach and prostate cancer.
They contain no cholesterol
and taste delicious!
Macadamias are highly
nutritious nuts. They have
the highest amount of
beneficial monounsaturated
fats of any known nut. They
also contain 9% protein, 9%
carbohydrate, 2% dietary

Huober Brezel (Germany)
- Snacks-Pretzels
Imported by : Chenab Impex
(Mumbai, India)
HUOBER
BREZEL is a family owned
business with over 50 years
experience in the production
of pretzels, salted sticks
an savoury biscuits. Highest
quality ingredients together
with dedicated craftsmanship
ensure customer satisfaction
with HUOBER products. HUOBER
Pretzels an beer-sticks
represent German
hospitality. Similar to
other snacks specialities
the HUOBER products
are favoured world-wide.
The HUOBER BREZEL -
Every single pretzel is a
greeting to the individual
consumer. Taste, crispness
and freshness are based on
solid handicraft. The art of
baking instead of artificial
baking aids.
Long before the expression
«quality management» was
fashionable, everything had
been done to protect the
original HUOBER aim of
quality. This can be seen in
the list of simple
ingredients. What is not
written on the packages is
not used!
HUOBER BREZEL is a
family business. 120
employees work in our
factory and support our
endeavours.
Machines help us. But the
technology is dictated by
the product and not the
other way round.
Attentiveness is a must. We
work according to the
motto:» Food should only be
produced by human beings.»
When we started to use more
and more certified organic
crops, the HUOBER bakers
were expected to consciously
accompany this change. Just
as there are high-bred
animals, there are also
manipulated types of grain
which are grown because of
one-sided economic
interests. In spite of the
«organic craze» many people
are simply not aware of the
social consequences of this
development. The decision
not to use
«machine-friendly» regular
flour has intensified our
efforts to achieve good
quality. The HUOBER bakers
say this in a special way:
«Our pretzels smile»!
The
quality of our hygienic
production is supported
scientifically by the
institute Prof. Dr. Pieldner.
They taste our goods
regularly and train our
employees who are
responsible for quality and
hygiene.
The Story: The pretzel - an
European symbol – The Long
distance runner on the
shelves of supermarkets
When in the eighties and
nineties some producers of
leach pastries (Laugengebäck)
vanished from the market, it
seemed that traditional
German snacks would
disappear. But it turned out
that there were other
reasons for this
development. While many new
products were not successful
on the market or were
hustled out by the latest
snack «innovations», the
pretzels remained very
popular with old and young
people or at least whenever
the brand kept what the
pretzel promised.
Crispy «permanent pretzels»
are still in. The constant
popularity of leach pastries
(Laugengebäck) proves that
there is life in the old dog
yet! In the face of an
ever-increasing range of
snack offers and constant
new taste incentives the
pretzel seems sometimes
out-dated and at best
nostalgic.
The Story: A CONTRIBUTION
TO TRADE CULTURE
In March 2001 the largest
Austrian newspaper raised a
question in its weekend
edition: «What is ‹European›
seen from the economic point
of view?»
In an age of globalisation
where all technical
achievements seem to be
transferable, people tend to
look for lasting cultural
symbols. And strangely
enough they find one of the
key symbols of the European
comprehension of economy: in
the pretzel. And the banner
is the photo of a girl shown
with HUOBER BREZEL S.
...
We have experienced similar
situations with our American
business partners: «We like
this kind of European
pretzels». How often we
could point out that it is
more difficult in Europe
itself to sell pretzels
outside the German speaking
area.
To be honest, our pretzels
are different from the
corresponding American bulk
goods, although these
articles are sometimes
offered as «Bavarian
pretzels» with white-blue
rhombuses and the film star
Paul Newman pictured on the
package.
HUOBER BREZEL - A
contribution to our time
Through the commitment to
controlled organically grown
crops and a production
without genetically
manipulated ingredients
HUOBER BREZEL gives an
additional content and
meaning to the
individualised form i.e. the
«European pretzel». This is
possible on a basis
HUOBER BREZEL has worked
on for decades and hasn’t
left to chance. The demand
for such products has
increased because of the BSE
scare as well as other food
scandals and has meanwhile
become politically
fashionable even though
consumer worries are quickly
dissipated in our fast
moving times and invariably
redirected into the
mainstream of unbending
progress.

Connetable (France) – Canned
Fish

Established in 1853, Connétable
is probably the oldest fish
cannery in the world still in
activity; specialising in canned
fish. Originally founded by Mr
Chancerelle in Douarnenez
(Brittany) and after six
generations of family ownership,
Connétable is steeped in history
resulting in a wealth of
expertise and knowledge about
canned fish. The range of

The turbulent Atlantic coast
produces a distinctive sardine,
well known to gourmets due to
their distinguishing firm flesh.
A limited edition vintage tin of
sardines is released once a year
that is highly sought after by
food connoisseurs, many of whom
leave them to mature as, like a
fine wine, sardines improve with
age and can be laid down for up
to five years. Highly decorative
with old fishing prints, only
40,000 tins are produced every
year. The sardines are
hand-trimmed, gutted and
immersed in olive oil to capture
the true flavour.
All the products are still
handmade as they were at the
creation of the company.
Connétable restores the faith
that there are quality tinned
products available on the
market. The sardines and
mackerel are a fantastic source
of omega 3 and there is a range
of line caught tuna that can be
savoured and enjoyed with a
clear conscious. Other fish
varieties include There are many
varieties within the range.

Henaff (France)
- Pork Pate
Starting in 1912, aware that
fish could be canned, Jean
Hénaff thought that pork could
be canned as well. From this
idea, a star was born: the
original Hénaff Pork Pâté recipe
using all the fine cuts of the
pig, including fillets and hams.
It all started very modestly. In
1914, the factory canned only
four pigs in its already blue
and yellow tins, this increased
to 73 in 1915, and about a
thousand in 1925.
The Hénaff adventure has been
one of the greatest success
stories of a company in
Brittany.
The recipe for success of this
small company is simple : it has
always kept to traditional
methods while applying strict
regulations required by major
international companies.

The Genuine Hénaff Pâté: sold by
the million each year. This
famous Pâté is made only with
pork (96%) including hams and
fillets, salt, spices and a
fraction of sodium nitrite to
keep its lovely pink color. Of
course, to make the famous
Hénaff Pâté it must be enhanced
with the little secret “je ne
sais quoi” which is a closely
guarded Hénaff family secret.
Made exclusively with fresh
meat, did you know that the
longer it stays in your pantry,
the better it gets? That's why
we keep it in our warehouse for
at least 6 weeks after
production.

DRINK

The blazing hot summer is
already here (and I don’t
mean the heat generated by
the elections!). To help you
keep cool (and to keep your
cool), we launch ENSO GREEN
TEA – READY TO DRINK.
ENSO represents the
traditional Green tea
serving ceremony in Japan.
Produced from green tea
grown in the highlands of
Thailand on the Myanmar
border, the plantation
represents an effort by the
Royal family to turn away
the hill tribes from growing
opium.
ENSO is rich in antioxidants
( antioxidants prevent
premature ageing & heart
diseases) and is real
traditionally brewed
Japanese green tea. It is
100% natural and no colours
or preservatives are used.
ENSO has 5 times more real
green tea than other brands.
ENSO ready to drink green
tea is packed in handy
bottle of 500ml. 3 flavours
are available :
1. Green Tea with HONEY
LEMON – refreshing, cooling
lime softened with honey, to
stimulate the mind.
2. Green Tea with GENMAI
Japanese rice – unique and
delicious brown rice flavour.
3. Green Tea with JASMINE –
sweet and delicate fragrance
of infused Jasmine blossoms,
China’s most famous tea
recipe.

refreshing (and I must add –
addictive) drink for a hot

low in calories – less than
half of a carbonated soft
drink.
