Based in the D.O.P. region
of Perigord (also known for

The selection of the best
products
All our foie gras are
selected for their certified
origin from the Périgord
region and benefit the "IGP
Périgord" trademark
(Protected Geographical
Indication).
This "IGP" (or PGI) is a
Europe-wide quality mark,
certifying the origin soil
of agricultural products.
The "IGP Périgord" trademark
is a guarantee that the
certified ducks are :
Raised in the Périgord
region
- with a permanent sanitary
surveillance of the ducks
- with access to an outdoor
grassy field
- in small farms
- and fed with cereals
Fed by gavage in Périgord
- at a minimum age of 12
weeks, for a minimum period
of 12 days, with 2 meals per
day
- exclusively with corn from
the South-West of France
- under permanent sanitary
surveillance, without use of
any antibiotic

The Best Fattened Ducks
Located in Gourdon between
Périgord and Quercy,
Valette Foie Gras is
still a family-run firm.
We select exclusively
fattened ducks that are
bred outdoors in
grasslands near our
carving centre of
Bergerac, at the very
heart of the Perigord
region.
In a natural
environment, all ducks
are fed only with corn,
without animal meal to
obtain the best quality
and security for our
customers.
Each step of the
production is placed
under control of an
independent
certification body,
Qualisud, guaranteeing
the origin and quality
of the ducks.
How to choose your Foie
gras

Since 1994 the
legislation regulates
each appellation for
foie gras based
preparations.
Only 3 appellations can
be called "foie gras" in
their trade name and
these appellations must
include exclusively foie
gras and a seasoning :
whole foie gras, foie
gras, block of foie gras
On the other hand, foie
gras based preparations
must include a minimum
of 20% of foie gras.

FOIE GRAS / UNCOOKED,

Uncooked
The uncooked foie gras
has not been under any
treatment, it is packed
in vacuum pack, the
packaging protects it
from the surrounding.
It is perfect to prepare
your terrines, or your
warm escalope.
Half-cooked
It is a
semi-preserved can of
foie gras, it is
pasteurized with a
temperature near to 80 °
C. this soft treatment
preserves more aromatic
and gustatory qualities.
It must be stored at a
temperature between 0
and 4 ° C.
Preserved can
The more traditional
preservation mode, the
preserved can is
sterilised at a
temperature near 110 °
C. It is a stable
product, which shelf
life rises to 4 years.
You can keep it at room
temperature.
Use-By date
This use-by date is
imperative ; it is
applicable to the
perishable goods ; after
this date, the
consumption of these
goods can represent a
danger for human
health. The use-by
date is present on the
packaging: "use
up before...see the
date".
The pick-up date
This date is not
imperative such as the
use-by date. When the
date is over, the good
may have lost its
qualities but it doesn't
represent a risk for the
consumer.
It is present on the
packaging: "best
before...see the date".
These dates are present
on :

- printed on the bottom
- printed on the
stickers of the sleeve
packs and of the vacuum

Lune de Miel
(France)


As you know, we represent
Lune de Miel, France’s
leading honey brand. LDM has
the largest range of honey
and hive products in the
World. We now launch their
range of Organic Honey and
Pure Canadian Maple Syrup.
Wait, you say, Organic
Honey? How is this possible?
Can bees identify the
organic plants? The answer
is – Organic honey is
produced in hives that are
surrounded by a large
Organic Farming area – at
least 10KM radius! Bees will
generally go no further than
6KM to 7KM from their hive
(in most cases, they will
travel even shorter
distances) and so an area of
10KM radius, assures one of
Organic honey.
In general the honey segment
in India is pretty much ‘All
Flowers Honey’. Bees are let
out and they go about and
gather nectar from all types
of flowers in their
catchment area (hence the
term All Flowers Honey). But
from Lune de Miel, we
introduced mono-floral
honeys – Acacia, Orange
Blossom, and polyfloral
honey - Mountain Honey,
Creamy Honey and Honey
Blends – Flowers Honey. In
glass bottles (not
recommended due to possible
contamination when using an
unclean spoon), and the

Years ago, Indian customers
had access to only two kinds
of olives – green ( stuffed
with pimento ) and black
pitted! And only 1 pack
size! Take it or leave it.
Still available, these
olives remain nameless (and
tasteless) till date – most
of them only fit to be
crushed to extract oil but
rescued from only to drown
in brine.
This all changed when in
2002 we launched the large
range of Lindsay olives.
Californian olives – Mission
variety - whole, pitted,
sliced, chopped and the
Spanish Olives – Manzanilla,
Queen, Hojiblanca – pitted,
whole, stuffed –
pimento/pure almond/pure
garlic/pure onion/ pure
jalapeno, Kalamata of
Greece, Sicilian from Italy
all under the Lindsay brand
(the World’s largest olives
packer).
Suddenly, you could choose
the olive to the occasion!
Chefs and gourmets began
demanding olives by name!
Celebrating the taste of
olives in 2005 we added
marinated and D.O.P. French
olives (Picholine, Nicoisse,
Lucques) from Barnier.
Then last year we introduced
stuffed Manzanilla from
Spain - stuffed with –

From Southern Italy, we
bring you Taralli.
Taralli are small ring
shaped salted/savoury
biscuits but with a
difference – using only
the best Apulia raw
material: extra virgin
oil, dry white wine and
flour and typical
Mediterranean
ingredients (sea salt,
anchovies, olives,
mushrooms, smoked ham
etc) in small quantities
to enhance the taste and
delight the consumer.
Produced by Fiore di
Puglia (Flower of Apulia
– and a play on the name
of its founder –
Giuseppe Fiore), this
artisan product is a
typical baked Apulian
product. Fiore’s
Taralli is sold in Italy
and abroad – they are on
the shelves of the most
important American and
European supermarket
chains and also in Japan
(where they have been
acclaimed as one of the
three best Italian
products introduced
recently).
Taralli should err on
the dry and crumbly
side, and they should
properly contain wine in
the dough recipe. There
are the Taralli Classici,
the savory sort, for
classic cracker use.
They make yummy snacks
on their own, and are
delightful in soup as
well. This particular
style does not have any
herbal flavor component,
having been made simply
with olive oil, flour
and salt, in addition to
yeast and wine. Then,
you can combine the
Taralli Classici with
any number of
Mediterranean
ingredients to produce
other delightful
flavours.
