San Marzano
tomato is mainly cultivated in
the Agro Sarnese
Nocerino area, and it
is known and appreciated
throughout the world for its
characteristics, which are
exalted by its transformation
into “peeled tomato”.
It
is cultivated as the vineyard
and is harvested three or four
times a year - from July until
September.
Its
taste is typically bitter-sweet,
and its colour is bright red,
the shape of its berry is
extended, with longitudinal
parallel depressions, with poor
presence of seeds and placental
fibres; moreover, its skin, when
completely ripe, can be easily
removed. These features,
together with the
chemical-physical
characteristics, let San
Marzano tomato be
unique, both in the fresh status
and in the transformed one. It
is a very delicate tomato, that
should be carefully handled.
After its harvest, the tomato is
washed and canned, with no
additives neither preservatives.
Thanks to the eruptive material
coming from the Vesuvius,
the Agro
Nocerino-Sarnese soil
is extraordinarily fruitful and
its products have an authentic
fragrance and taste.
In
this ecological area,
San Marzano tomato has
reached its complete ripeness
and has achieved its the best
organoleptic characteristics.Solania

In
1996 the
transformed tomato was
recognized by the
European Union as a
Denomination of
Protected Origin (D.O.P.)*
product and every year it is
renewed by IsMeCert
(Mediterranean Institute
for food products and processes
Certification). In 2002
Legambiente
granted Solania
the logo LAIQ -
high recognition of quality -

QUALITY AGRICULTURE is
a project for the food
productive networks that adopt
productive methods and practises
which tend towards quality,
safety, ecological compatibility
and ethics.
The
