Poached Egg Benedict

Ingredient
- 8 slices Brown bread
- 8 Eggs
- 15 ml Pure olive oil
- 25 gm Strong Dijon mustard (delouis fils)
- 100 gm Fresh mayonnaise (delouis fils)
- 150 gm Spinach
- 10 gm Fresh basil (minced)
- 10 gm Fresh parsley (minced)
Recipe
Cut the edges and Toast the brown bread. Meanwhile prepare the sauce.
Mix mustard with mayonnaise, minced parsley and minced basil, and stir it nicely.
Now in a pan put hot water for boiling and add little white vinegar, now break the egg and poached it in the water (be sure that yolk will remain as it is).
We will recommend cooking the egg well done.
While egg being cooking wash the spinach and chopp it roughly. After that toss it in a pan with pure olive oil, minced onion and garlic.
Finally at the time of serving apply the sauce on one side of all the breads, then put sautéed spinach over it and top with poached egg over each slices.
Again apply little sauce on the top of poached egg and garnish it using fresh minced parsley.
For accompaniment you can have baked potato or green salad.
We will recommend you to have this healthy Florentine with sip of hot chocolate (clipper UK) or with clipper tea (UK).
Serving 4 adults.
