Family Reserve
The Borges "FAMILY RESERVE" oil
is obtained exclusively from
ARBEQUINA OLIVES, typical of and
originating from the regions of
Lleida and Tarragona. The
arbequina olive is oval, short
and almost symmetrical. It is
extremely small and its weight
varies between 0.8 and 1.20,
with a much lower fat content
(17.2 to 19.5%) than that of
other varieties (which always
exceed 20%.). It is therefore a
very compact variety, whose pulp
or flesh constitutes between 67%
and 76% of its total volume.
The areas where it is grown (Les
Garrigues and Baix Camp) produce
very little, varying between 4.5
and 6 million kilos of oil per
year. Family members and
neighbours normally pick the
olives traditionally, since, due
to the ruggedness of the land,
it is almost impossible to use
machinery. |

Aberquina Extra Virgin
The Arbequina olive is oval,
short, almost symmetrical, with
a weight varying between 0.8 and
1.2 g. Although its fat content
is very low, it is highly prized
for its frost resistance and the
low acidity of its oil.
Cultivated in Llleida, much of
the region around Tarragona and
the areas surrounding Saragossa
and Huesca.
Recommended uses
The elegant flavor of the
Arbequina olive gives an
unparalleled taste and appeal to
all kinds of salads, vegetables
and white fish. |

Hojiblanca Extra virgin
This olive is sturdy, oblong and
quite symmetrical. Its weight
varies between 1.4 and 4.3 g.
Originating from Lucena
(Cordoba), it is also cultivated
in the provinces of Seville and
Malaga.
Recommended uses
It gives a very
particular and distinguished
touch to salads, escabeche
sauces, fish and gazpachos. |

Picual Extra Virgin
It has an ellipsoidal shape, is
pointed at the top and weighs
between 2.14 and 3.66 g. It is a
meaty olive with a high fat
content. The Picual olive is
from Jaén and is also cultivated
in Granada, Cordoba and Ciudad
Real.
Recommended uses
It enhances the flavor of
fried food, especially potatoes,
and is an excellent base for
fried onion and tomato bases,
stews and hotpots. It can also
be enjoyed to the fullest on a
slice of toast. |

Which oil?
There are more types of oil in
Italy than there are whiskies in
