French Egg Florentine

Ingredient
- 8 Eggs
- 100 gm Hollandaise sauce (delouis fils)
- 8 slices White bread
- 10 gm Fresh parsley (minced)
- 150 gm Fresh spinach
- 50 gm Parmesan cheese / mozzarella cheese (shredded)
- 10 gm Fresh basil (minced)
Recipe
Remove the edges of the bread and Toast the bread.
Now in a pan put hot water for boiling and add little white vinegar, now break the egg and poached it in the water (be sure that yolk will remain as it is).
We will recommend cooking the egg half done.
While egg being cooking wash the spinach and chopp it roughly. After that toss it in a pan with pure olive oil, minced onion and garlic.
Same time while eggs are getting done prepare sauce by mixing hollandaise sauce with minced parsley and basil.
At the time of serving spread spinach equally on the bread and then put poached egg on it, now apply prepared sauce on poached egg and cover it with cheese. Bake it in a salamander till cheese starts melting.
We will recommend you to have this healthy Florentine with sip of hot chocolate (clipper UK) or with clipper tea (UK).
