In Italy, the expression "Natale con i suoi, Pasqua con chi vuoi" is frequently heard ("Christmas with your family, Easter with your own choice of friends"). Oftentimes, this implies sitting down to a dinner that starts with minestra di Pasqua, the traditional beginning of the Neapolitan Easter meal.

Other classic Easter recipes include carciofi fritti (fried artichokes), a main course of either capretto o agnellino al forno (roasted goat or baby lamb) or capretto cacio e uova (kid stewed with cheese, peas, and eggs), and carciofi e patate soffritti, a delicious vegetable side dish of sautéed artichokes with baby potatoes.

A holiday meal in Italy would not be complete without a traditional dessert, and during Easter there are several. Italian children finish their dinner with a rich bread shaped like a crown and studded with colored Easter egg candies. La pastiera Napoletana, the classic Neapolitan grain pie, is a centuries–old dish with innumerable versions, each made according to a closely guarded family recipe. Another treat is the Colomba cake, a sweet, eggy, yeasted bread (like panettone plus candied orange peel, minus the raisins, and topped with sugared and sliced almonds) shaped in one of the most recognizable symbols of Easter, the dove. The Colomba cake takes on this form precisely because la colomba in Italian means dove, the symbol of peace and an appropriate finish to Easter dinner.

Its time to stock up for Easter and Scarpato offers traditional Italian Easter cakes – Colomba. As you know, Scarpato offers its iconic cakes at two times, every year – Panettone / Pand’oro at Christmas and Colomba at Easter.

Colomba Cake

The Colomba is a symbol of Easter, but a tradition born on industrial demand and diffused in all of Italy. The Colomba was born a dessert cake with a similar composition to the panettone, but that is enriched with the flavour of amaretto. The Colomba has very old roots, way into the second half of the sixth century in which it was offered to "Alboino" the king of the Longobardi, (who happened to be harassing the city of Pavia) a yeast bread formed into the shape of a donut. Although the ingredients weren't very rich (egg, flour and yeast), in respects to the ones we have today, in which we use butter, sugar and candied fruits. They must though, add a topping of almonds, and dried fruits. The form of the Colomba (pigeon) was given by a choice made not of its symbolic nature, but also for the season; springtime.

The Easter Holiday all over the world is connected to nature, and was born for this reason; for thanks and offerings. Eggs, vegetables, lamb, chocolate and cakes in the form of a Colomba are present in the Italian Home. All these ingredients of the Easter tradition have a worldly story behind them-the chocolate eggs were invented in Torino in the 1800's, as a refined substitute of the traditional exchanging of chicken eggs, that in turn represented the end of fasting.

The Easter Colomba, in respects of the Italian gastronomy and today represents a production of excellence in pastry making. In fact, the Colomba is a delicate dessert cake, it must be soft, aromatic on the outside, and moist on the inside and naturally left to rise one entire night.

Fox's Glacier Fruits were launched in 1956 as an extension to the Glacier range and soon became an integral part of the Fox's Confectionery portfolio.

Fox's Glacier Fruits are made with real concentrated fruit juice and contain no artificial colours and now with added vitamin C.
