In
1933, brothers Jack and Bill
Hume set up a modest
dehydration processing plant
in Vacaville, California,
using a technology that was
later applied to potatoes.
This was the beginning of
Basic American Foods.
In the mid-fifties, Basic
American Foods established a
potato processing plant in
Blackfoot, Idaho, where the
first instant potato product
that could be rehydrated
with boiling water was
developed. This led to a
series of innovative potato
products for the foodservice
industry that includes the
brands Potato Pearls®,
Potato Pearls EXCEL®,
and Nature's Own®
Potato Pearls®
Premium Mashed Potatoes,
Redi-Shred®,
Golden Grill®,

grew, additional plants were
built in Idaho and in other
prime potato growing areas
like Wisconsin and
Washington.
We now offer two great
products from BAF – Mashed
Potatoes and Hashbrowns.
Unlike other potato products
in the market, these do not
require cold storage and can
be kept at room temperature.
What’s more the mashed
potatoes and hash browns are
quite unique from what
exists in the Indian market.
For example, the hash browns
are not single pieces but to
be baked in a tray in an
oven (not fried), and the
guests can be served
portions from the tray, as
they require. Personally, I
find the aroma
irresistible!

Serving Suggestions: Mashed
Potatoes
Divide mashed potatoes into
several smaller portions and
incorporate them into a unique
plate presentation.
Top a large sautéed portobella
mushroom or eggplant with creamy
mashed potatoes and crisp bell
peppers. Repeat layers three or
four times for an elegant
stacked presentation.
Serve stir-fried shrimp and
vegetables on a creamy bed of
skin-in potatoes instead of
white rice.
Pipe mashed potatoes, plain or
flavored, into half of a large
potato shell using a rosette
tip. Sprinkle with herbs or
grated cheese.
Try these vegetable mix-ins:
Corn and red bell pepper blend,
diced carrots, shredded kale,
zucchini and onion blend,
cabbage, fennel, green onions,
leeks, mushrooms, acorn squash,
pumpkin, roasted garlic,
turnips, or sweet onions.
Substitute chicken, beef, or
vegetable broth for boiling
water when preparing mashed
potatoes.
Use as a base for cream soups
and chowders.
Pipe mashed potatoes into
steamed or blanched bell pepper
halves or zucchini.
Make Midwestern Meat Loaf Cake
by topping your favorite meat
loaf with mashed potatoes. Brush

bits and cheese. Serve with
scrambled or fried eggs for
breakfast.
Make an easy breakfast casserole
by topping mashed potatoes with
melted cheddar cheese,
scallions, and bacon.
Use mashed potatoes as a base
for dough for a variety of
breads and muffins.
Make a Mexican side dish. Mix
mashed potatoes with cumin and
whole-kernel corn.
Use mashed potatoes right from
the carton as a coating for
meats and poultry that have been

Prepare a "devil" of a baked,
